Our regional roots
Historically, mustard production in France was concentrated around the wine-growing regions. Mustard manufacturers could be found just about everywhere in France, and particularly in Burgundy, since one of the essential components of mustard was originally verjuice (an acid juice extracted from unripe grapes). But in the 18th century, a master vinegar-maker from Dijon, Jean Naigeon, replaced the verjuice with vinegar to improve the taste of the mustard, hence the name “Dijon mustard”.
Dijona mustard is still made in Burgundy, just 15km from Dijon. Thanks to our regional roots and more than 180 years of know-how, we can offer you a Dijona mustard with character, a spiciness and smoothness all its own.
